Honey Butter Fudge

4 cups sugar
3/4 cup peanut butter
2 egg whites - stiffly beaten
1 teaspoon vanilla
1 cup water
1 cup chopped nuts
1 cup honey your choice

Combine 1 cup and 1/2 cup water and boil to about 238 degrees. Add
slowly to stiffly beaten egg whites. Beat till stiff. Menwhile, combine
and cook 3 cups sugar, honey, peanut butter, and 1/2 cup water to 238
degrees. Add to the first mixiure slowly as you stir. Beat till stiff
and creamy. Add nuts and flavor; drop by spoonful or pour into buttered
pan.

Honey Butter Fudge

1 cup sugar
1 cup brown sugar
1/4 cup butter
2 Tbsp honey
1/2 cup evaporated milk
1/2 tsp vanilla

Mix first 5 ingredients in a saucepan. Stir constantly until mixture
boils. Boil with stirring for about 7 min., or to the soft ball stage:
250F. Cool pan slightly in a dish of cold water. Add vanilla and beat
until creamy. Scrape into a 7" X 7" pan. Mark into 36 squares and cool
overnight. Cut fudge into pieces and separate to dry slightly.
