Cauliflower Puff

Conover's Bay Head Inn, Bay Head, New Jersey.

Yield: 5 servings

1 (10 ounce) package frozen cauliflower, cooked until very tender and
drained
2 large eggs, separated
2 Tbsp milk
1/2 tsp salt
Pepper to taste
2 Tbsp finely chopped scallion
1/2 cup grated cheddar cheese
2 Tbsp butter, melted
2 Tbsp grated Parmesan cheese

In an electric blender whirl until smooth the cauliflower, egg yolks,
milk, salt and pepper. In a medium bowl, beat the egg whites until stiff:
gradually fold in the cauliflower mixture, scallion and cheddar cheese.
Spread over the bottom of a buttered 9 inch pie plate. Drizzle with
butter; sprinkle with the Parmesan cheese. Bake in a preheated 375 degree
oven until golden brown and set 20 minutes. Cut into wedges and remove
with wide spatula.

Cauliflower Puff

1/2 Medium cauliflower cut into flowerettes

Sauce:
2 Tbsp butter
1 Tbsp. flour
1 Cup milk

Hot Cheese Topping:
2 egg whites
2 Tbsp mayonnaise
2 tsp. sweet chili sauce
1/2 cup grated cheddar cheese

Drop flowerettes into a pan of boiling water & cook for 8 to 10 minutes,
or until tender. Drain & transfer to a greased ovenproof dish. To make
sauce, melt butter in saucepan , add flour; cook 1 minute- stirring. Blend
in milk, stirring until sauce boils & thickens. Pour sauce over
cauliflower. To make topping, beat egg whites until stiff peaks form. Fold
through combined mayonnaise & chili sauce. Spoon over cauliflower mixture.
Top with cheese. Bake at 425 for 10-15 minutes, or until puffed &
golden.

Cauliflower Puff

Cauliflower with a puffed-up omelet baked on top.

1 large or 2 small heads cauliflower (5-6 cups florets)
4 eggs, separated
1 cup yogurt
1 cup shredded cheese of choice
1 teaspoon salt
pepper
1 tablespoon minced chives

Preheat oven to 350o F. Break cauliflower into florets and steam for 5 to
7 minutes until barely tender. Placed steamed cauliflorets close together
in a greased 9-inch baking dish. Beat egg yolks with yogurt, cheese and
seasonings. Beat whites until stiff and fold gently into yolks until
evenly combined. Spread over cauliforets. Bake for 15 to 20 minutes until
puffed and brown. Serve while still hot.
Yield: 6 servings

Giant Cauliflower Breakfast Puff

This is my version of a recipe from Mollie Katzen's "Sunlight Cafe," a
new cookbook of breakfast treats. You can use almost any combination of
tender herbs (parsley, marjoram, oregano, thyme, chives, or tarragon)
for this savory "pancake".

Servings: 6
Time: about 90 minutes

3 tablespoons butter
1 tablespoon olive oil
2 cups chopped sweet onion
1/4 teaspoon salt
5 cups cauliflower florets
6 organic eggs
1 cup organic milk
1 cup all-purpose flour
6 oz goat cheese
1 handful chopped herbs (2+ tablespoons)

Preheat oven to 350 . Place butter in a 9 x13 pan and place in the
preheating oven for 1-2 minutes. When the butter is melted, remove the pan
from the oven and coat pan evenly with the butter. In a 10" skillet over
medium heat, add the olive oil and onions. Saute for 5 minutes, and then
add the salt and cauliflower. Cook for 8-10 minutes, until cauliflower is
tender. Transfer the cauliflower mixture to the buttered pan. Combine
eggs, milk, flour and cheese in a blender. Whip into a smooth batter. Add
the herbs and pour over the cauliflower. Bake for 35-40 minutes until
puffed and golden brown. Serve hot or warm.

Cauliflower Cheese Puff

Servings: 4

2 slices bread
1 1/2 cups cauliflower -- cooked
2 teaspoons butter
2 eggs -- separated
1 cup cottage cheese, 1/2% fat
1 slice onion
3/4 teaspoon salt
1/4 teaspoon pepper

Butter the bread and crumb. Chop the cauliflower and add. Blend
yolks, cheese, onion, and seasonings till smooth. Add to cauliflower,
Beat whites until stiff and fold in. Put in greased 1 qt. casserole,
set in a pan of hot water. Bake at 350F for about 40 min. or till
firm.

NOTES : Broccoli may be substituted for the cauliflower.

Cauliflower Cheese Puff

1 lg. cauliflower
3/4 cup grated Cheddar cheese
1 tsp. sugar
1 1/2 cup med. white sauce
4 eggs, separated
Salt & pepper to taste

Trim cauliflower break into flowerettes. Cook in boiling salted water
until barely tender. Put in buttered shallow baking dish. Make white
sauce, add cheese. Beat egg yolks, sugar, salt and pepper and add white
sauce. Beat egg whites until stiff and fold into sauce. Pour over
cauliflower. Bake 350 degrees for 20 minutes or until firm.

4 to 6 servings.
