You can use almost any combination of tender herbs (parsley, marjoram, oregano, thyme, chives, or tarragon) for this savory "pancake". Servings: 6 Time: about 90 minutes 3 tablespoons butter 1 tablespoon olive oil 2 cups chopped sweet onion 1/4 teaspoon salt 5 cups cauliflower florets 6 organic eggs 1 cup organic milk 1 cup all-purpose flour 6 oz goat cheese 1 handful chopped herbs (2+ tablespoons) Preheat oven to 350 . Place butter in a 9 x13 pan and place in the preheating oven for 1-2 minutes. When the butter is melted, remove the pan from the oven and coat pan evenly with the butter. In a 10" skillet over medium heat, add the olive oil and onions. Saute for 5 minutes, and then add the salt and cauliflower. Cook for 8-10 minutes, until cauliflower is tender. Transfer the cauliflower mixture to the buttered pan. Combine eggs, milk, flour and cheese in a blender. Whip into a smooth batter. Add the herbs and pour over the cauliflower. Bake for 35-40 minutes until puffed and golden brown. Serve hot or warm.
