Holmes Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds lean ground beef 1 8 oz. can tomato sauce 1 14 oz. can stewed tomatoes -- undrained 1 15 oz. can whole kernel corn -- undrained 1 large white onion -- finely chopped 1 15 oz. can pitted black olives -- drained 1 cup yellow corn meal 1/2 teaspoon granulated garlic 1/2 teaspoon onion powder 2 tablespoons chili powder 1 teaspoon ground black pepper 1/2 teaspoon salt 1 cup cheddar cheese -- shredded Preheat oven to 375 degrees and lightly spray a 9x13 rectangular baking dish with vegetable spray. In a large skillet, crumble hamburger and brown until done. Add diced onions, garlic salt, onion salt, chili powder and black pepper. Simmer until onions are clear. Add tomato sauce, stewed tomatoes, corn and corn meal. Add olives and mix well, then and pour into baking dish. Place in oven for 30 minutes, or until bubbling around edges. Remove from oven and spread shredded cheese over the top and return to oven until cheese is fully melted and lightly browned, about 5 - 7 minutes. NOTES : Variations: You may add cilantro, parsley jalapeno peppers or celery to taste. White pepper may be substituted for black pepper. * Exported from MasterCook * Tamale Pie Recipe By :Betty Fussell Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 ounces butter 3 cups instant grits 3 cups chicken stock -- boiling 1 large onion -- chopped 2 cloves garlic -- minced 1 green bell pepper -- chopped 3 tablespoons butter 4 cups cooked chicken -- or pork, shredded 2 pimento -- chopped 1 1/2 cups olives -- black or green, pitted 2 tablespoons chili powder -- or to taste salt and pepper to taste Preheat oven to 350 degrees. Whip the 1/4 pound butter until light and soft. Beat in the grits and gradually add in the boiling chicken stock until mixture is smooth. Cover and set aside while you make the filling. Sauté onion, garlic and bell pepper in 3 tablespoons butter until soft, about 5 minutes. Stir in the remaining ingredients and mix well. Taste and add more chili powder if wanted, because the grits mixture will absorb most of the heat. Spread half the prepared grits mixture in a 9 inch square baking pan. Cover with the meat mixture and smooth remaining grits mixture over the top. Bake for 30 minutes, or until crusty on top and filling is heated through. * Exported from MasterCook * Pork Tamale Pie Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- FILLING 1 1/2 pounds lean ground pork 1/2 cup onion -- chopped 2 cups canned tomatoes 2 cloves garlic -- minced 1 teaspoon chili powder 1/2 teaspoon salt 1/2 teaspoon oregano 1/4 teaspoon pepper CORNMEAL TOPPING 1 cup yellow cornmeal 2 tablespoons all-purpose flour 1 tablespoon sugar 2 teaspoons baking powder 1/4 teaspoon salt 1 egg -- lightly beaten 1/2 cup milk 1 tablespoon vegetable shortening -- melted Preheat oven to 425 degrees. In a food processor or blender, add 1 cup tomatoes, garlic and chili powder. Puree until thick and chunky. Add remaining tomatoes and continue to puree until thickened. In a large oven proof skillet, sauté pork, crumbling and stirring until meat is browned. Pour tomato puree into pan. Stir in oregano, salt and pepper. Bring to a boil, reduce heat and simmer 30 minutes. Meanwhile, mix cornmeal with flour, sugar, baking powder, and salt in a large bowl. In a smaller bowl combine egg, milk, and shortening. Add wet ingredients to dry and stir until just moistened. Spoon batter over simmering filling and bake 20 - 25 minutes, or until golden brown. * Exported from MasterCook * Chicken Tamale Pie Recipe By :alt.cooking-chat Serving Size : 14 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- TAMALE DOUGH 1/2 cup vegetable shortening 3 cups masa harina 1 teaspoon baking powder 1/2 teaspoon salt 1 cup chicken stock FILLING 1/4 cup vegetable oil 1 cup onion -- chopped 1 clove garlic -- minced 1 16 oz. can whole tomatoes -- coarsely chopped 1 teaspoon salt 1 tablespoon chili powder 1/2 teaspoon cumin 3 cups cooked chicken -- diced Preheat oven to 350 degrees and grease a 2 quart ovenproof casserole. TAMALE DOUGH; In a mixer bowl beat vegetable shortening until fluffy. In a separate bowl combine masa harina, baking powder and salt. Gradually beat masa harina mixture and chicken stock into shortening until dough sticks together and has a pastelike consistency. Press half the dough into prepared casserole bottom and sides in a layer about 1/2 inch thick. Reserve remaining dough for top. FILLING; Heat vegetable oil in a large skillet and sauté onion and garlic until onion is soft, about 5 minutes. Add tomatoes, salt, chili powder, and cumin. Stir well, reduce heat and simmer, uncovered, 10 minutes. Stir in chicken and continue to cook an additional 5 minutes. Pour filling into prepared casserole and top with remaining dough patted out into a layer the same thickness as lining. Bake 1 hour.
