Default Tamale Pie

Tamale Pie

1/2 lb. ground Chuck
1/2 lb. Chorizo, Mexican sausage, casings removed and meat crumbled up
1 small can Green Chilies
1/2 cup chopped Onion, or more to taste
1 or 2 Jalapeno Peppers, diced fine
1 can Mexican Seasoned Tomatoes
1/2 tsp. Salt
2 tsp. Chili Powder, or to taste
1 can Mexican Style Whole Kernel Corn, drained
1 cup Cornmeal
2 Tbsp. Flour
2 Tbsp. Sugar
2 tsp. Baking Powder
1 Egg, beaten
2 Tbsp. Oil
1/2 cup Milk
12 to 15 Ripe Olives

Brown meat with onions and peppers. Add tomatoes after draining meat well.
Add salt, chili powder and corn, cook 10 minutes.
Combine remaining ingredients and mix well. Place meat in an 8x8" square
baking dish. Top with cornmeal batter. Place olives all over top of
cornmeal batter. Bake 30 minutes in a 350 degree oven or until toothpick
inserted near center of dish comes out clean.

Serves: 4 hearty appetites
