"So Simple" Cauliflower Mash

Prep Time: 5 min
Total Time: 20 min
Makes: 8 servings, 1/2 cup each

8 cups cauliflower florets (about 1 small head)
1/4 cup Ranch Dressing
1 green onion, thinly sliced

Bring water to boil in large saucepan. Add cauliflower; cook 15 min. or until
cauliflower is very tender. Drain cauliflower; return to saucepan. Add dressing; mash
until cauliflower is light and fluffy. Sprinkle with onions.
For a smoother potato-like texture, puree cooked cauliflower and dressing together in
food processor or with immersion blender until very smooth.

To Halve This recipe can easily be halved. Just prepare as directed, cutting all
ingredients in half. Makes 4 servings.
