Chow Fun (Fried Broad Noodles) with Beef and Broccoli

1 lb. fresh noodles (or equivalent dried)
1/2 lb. beef
1/2 lb. broccoli

Marinade:
1 tsp cornstarch
2 tsp light soy sauce
1 tsp sherry

2 cloves garlic (or more)
1 slice ginger (size of U.S. quarter or more)
2 tsp light soy sauce
4-5 Tbsp oil
3 Tbsp oyster sauce
2 tsp sesame oil

Slice meat into thin strips Put meat into marinade for at least one hour
(longer is ok) Break broccoli into flowerettes Prepare noodles according
to package directions. Drain Heat 1 Tbsp oil to almost smoking Add
broccoli. Stir fry for 3-4 minutes Remove broccoli from wok/pan. Heat 1
Tbsp oil to almost smoking. Stir fry garlic and ginger in oil for about 30
seconds Add beef. Stir fry beef in same oil as garlic and ginger. Add 1
Tbsp oyster sauce to beef as it stir fries. Remove beef to same bowl as
broccoli Heat 2 Tbsp oil to almost smoking Add cooked noodles. Stir fry
noodles for about 3 minutes. Add beef and broccoli to noodles. Add
remainder of oyster sauce to noodles. Add soy sauce and sesame oil to
noodles. Stir fry everything to blend flavors.

NOTES: This is easier and faster than the 19-step instructions might
indicate.
