Red Beans And Rice with Ground Meat

2 tablespoons vegetable oil
1/2 pound lean ground beef
1 cup chopped onions
1 cup chopped peppers, green
1 clove garlic, crushed
1 Tbsp lemon juice
1 Tbsp Zatarain's Creole Mustard
1 tsp Zatarain's Cayenne Pepper
2 tablespoons soy sauce
1-cup tomato sauce
2 cups kidney beans, cooked, drained
3 cups Zatarain's Long Grain Parboiled Rice, cooked

Heat oil in large skillet over medium heat. Add beef, onions, green
pepper,
and garlic and saute until tender, stirring frequently. In a small bowl
combine lemon juice, mustard, cayenne, soy sauce, and a small amount of
tomato sauce and whisk until thoroughly blended. Stir in remaining tomato
sauce, and then add to meat mixture. Add beans and cook for 20 minutes, or
until flavors are well blended.
Serve spooned over hot rice.



Traditional Monday Red Beans And Rice

1 lb red beans, soaked in about 2 quarts water overnight
3 ribs celery, chopped
1 medium green bell pepper, chopped
1 clove garlic, minced
1 large onion, chopped
2 Tbsp Zatarain's Parsley Flakes
1/4 tsp Zatarain's Cayenne Pepper
1 package smoked sausage, cut in 1/4-inch thick slices
Serve over Zatarain's Long Grain Parboiled Rice

Rinse and drain soaked beans; place in a 5 to 6-quart pot and add 6 cups
of
water. Bring to a boil, then reduce heat and simmer for about 1 1/2 hours,
or until beans are tender.
Stir occasionally. Add remaining ingredients and salt to taste; simmer for
about 1 hour, stirring occasionally. Add water as necessary.
Serve over Zatarain's Extra Long Grain Parboiled Rice hot rice

Here's an easy recipe for red beans and rice.



Red Beans And Rice

2 cans red kidney beans, (15 ounces each)
3 slices bacon
1 large onion, chopped
1/2 cup chopped celery
1 small bell pepper, chopped
2 tablespoons chopped parsley
1/2 cup chopped green onions, with tops
2 tablespoons ketchup
1 1/2 teaspoons Worcestershire sauce
1 jar (2 oz) chopped pimiento
1 can (8 oz) tomato paste
1 teaspoon chili powder
1/2 pound Polish sausage, sliced, if desired

Fry bacon and crumble into kidney beans. Saute vegetables in the bacon
drippings. Cook until vegetables are wilted. Add beans and remaining
ingredients. Cover and simmer for 30 minutes. Serve over rice.
Serves 4.



Red Beans and Rice

2 cups dried red kidney beans
5 strips bacon, cut up
1/2 cup uncooked rice
2 1/2 quarts water
1 clove garlic
Salt and pepper to taste

Soak beans overnight in 1 qt of water in a heavy pot
Drain. Add another 1 1/2 qt's of water, bacon, garlic and a little salt
Simmer slowly for 3 - 4 hours until beans are very soft,
and water has cooked down to a thick red sauce
Add salt and pepper to taste and serve over cooked hot, fluffy rice
Serves 6.
