Sweet Potatoes with Caramelized Apples

Prep: 10 min, Marinate: 8:00, Cook: 40 min.

6 sweet potatoes
1 tsp. salt
3 Granny Smith apples, peeled and cored
1 Tbsp fresh lemon juice
1/2 cup plus 1 Tbsp unsalted butter
1/4 cup plus 2 Tbsp dark brown sugar, packed
1/4 cup plus 2 Tbsp heavy cream
1/4 cup Calvados or brandy
1/4 cup fresh orange juice

Preheat oven to 425 F. Bake potatoes 40-45 minutes until soft. When cool
enough to handle, peel and place flesh in a bowl. Add salt and mash with a
fork. Meanwhile, slice apples into 1/8 inch thick wedges and place in a
bowl. Add lemon juice and toss to combine. Melt 3 Tbsp butter in a heavy
nonstick skillet over medium high heat. Add 2 Tbsp brown sugar and cook,
stirring until sugar dissolves. Cook apple slices 1 minute per side in
butter and sugar in 3 or 4 batches, until golden and caramelized. As they
finish cooking, transfer to a plate and set aside.

Melt 3 Tbsp butter in a heavy nonstick skillet over high heat. Add 2 Tbsp
brown sugar and cook until sugar dissolves. Stir in 1/4 cup cream and
Calvados and cook 1 minute until slightly thickened. Remove from heat and
add to sweet potatoes, mixing well to combine. Transfer potato mixture to
a buttered 3 quart ovenproof casserole. Arrange apple slices over potatoes
and set aside.

Melt remaining 3 Tbsp butter in a heavy nonstick skillet over medium heat.
Add remaining 2 Tbsp brown sugar and cook until dissolved. Add remaining 2
Tbsp cream and stir 30 seconds. Stir in orange juice and cook 1-2 minutes,
until thickened and dark brown. Pour over apples and cover with aluminum
foil. Bake about 30 minutes until heated through. Remove from oven and
serve immediately, or let stand at room temperature for up to 30 minutes
before serving.
This recipe serves 10 people. Due to the nature of this recipe, it adjusts
the number of servings in multiples of 10 only.
