Cajun Seasoning

1 box salt
3 Tbsp black pepper
2 Tbsp garlic powder
1 tsp onion powder
1 tsp nutmeg
2 Tbsp parsley flakes (crunched)
4 Tbsp red pepper (ground) (cayenne)
2 Tbsp chili powder

Combine all ingredients; store in an airtight container.

Cajun Seasoning Mix

A cajun seasoning mix is used in many cajun recipes. It is basically
salt with a variety of spices. There are many commercial seasoning
mixes on the market. Probably the most common is Tony Chachere's
Original Seasoning. Another excellent seasoning mix is Zatarain's
Seasoning. Below is a seasoning mix recipe if you would like to make
your own. Experiment with every batch until you have the spice
combination you like.

26 oz table salt
5 Tbsp cayenne pepper
3 Tbsp black pepper
3 Tbsp onion powder
3 Tbsp garlic powder
3 Tbsp chili powder
1 Tbsp thyme
1 Tbsp sweet basil
1 Tbsp bay leaf

Add all the seasoning, except salt, in a blender. Cover and blend to a
fine consistency. Don't breath the dust - it throws me into a sneezing
frenzy !

Mix the blended spices with the salt until you achieve a uniform color.


Use as you would salt.

Cajun Seasoning Mix

1 tablespoon Sweet paprika
2 1/2 teaspoons Salt
1 teaspoon Onion powder
1 teaspoon Garlic powder
1 teaspoon Ground red pepper (preferably cayenne)
3/4 teaspoon White pepper
3/4 teaspoon Black pepper
1/2 teaspoon Dried thyme leaves

Combine ingredients and mix well.
