Default Frosted Meatloaf

Frosted Meatloaf

Source: Wisler's Country Cooking II

1 1/2 pounds ground beef
1 (10 oz.) can of cream of mushroom soup
1 cup small bread cubes
1/2 cup finely chopped onion
1 egg, beaten
1/2 teaspoon salt
Dash of pepper
2 cups mashed potatoes
1/4 cup water
1 to 2 tablespoons bacon drippings

Mix beef, 1/2 cup soup bread, onion, egg, salt and pepper. . Shape into
firm loaf. Place in shallow baking pan. Bake at 350 degrees for one hour.
Frost with potatoes. Bake 15 minutes more. Blend remaining soup,
water and drippings. Serve with loaf. Makes 4 to 6 servings.
