Default Bella Blue Cheese Bruschetta

Bella Blue Cheese Bruschetta

Marinated portobello mushrooms seasoned with McCormick Montreal Steak
Seasoning and served on a toasted French baguette with crumbled blue
cheese, diced tomatoes, and scallions.

Serves 4

2 Tbsp vinegar, balsamic
6 Tbsp olive oil, extra-virgin
1 Tbsp McCormick Montreal Steak Seasoning
1/2 tsp salt
1 lb portobello mushrooms, 1 1/2" strips, sliced 1/4" crosswise
4 French baguettes, sliced 1/4" on a very sharp bias so each slice is
4" long
4 oz blue cheese crumbles
8 oz plum tomatoes, seeded, diced 1/4"
1 tsp McCormick Montreal Steak Seasoning
1/4 tsp salt
1/4 cup scallions, sliced 1/4"

Combine vinegar, oil, seasoning, and salt. Add mushrooms and
refrigerate for 1 hour. Heat a saute pan over medium heat. Add
marinated mushrooms and saute. Allow to cool.
Toast the baguette slices on both sides. Allow to cool.
Combine the blue cheese, tomatoes, seasoning, and salt.
Plating instructions: Place 4 oz. of mushrooms per toasted baguette.
Top each with 3 oz. of tomato mixture. Garnish with 1 tsp. scallions.
Serve 4 slices.

Chef's Tip:

For extra flavor dimension, brush the baguette slices with McCormick
Roasted Garlic Flavored Oil.
Use the blue cheese mushroom mixture as a spread on a grilled
vegetarian hoagie with vegetables seasoned with Roasted Garlic Flavored
Oil or Montreal Steak Seasoning.
