Deluxe Cheeseburger Melt

1 1/2 cups Bisquick baking mix
1/4 cup water
2 eggs
1 1/2 cups cheddar cheese -- shredded
1 pound ground beef
1 10 oz. can cream of mushroom soup
1 cup frozen mixed vegetables

Preheat oven to 400 degrees and lightly spray a 9 X 13 inch pan with
vegetable cooking spray.
In a medium bowl combine Bisquick, water, eggs and 1 cup cheese. Mix
well
to combine and spread in bottom of prepared pan.
In a large skillet, oven medium high heat, brown beef, then drain off
excess fat. Stir in soup and vegetables and cook until heated through.
Spread vegetable/beef mixture over batter in pan and bake until edges
are
light golden brown, about 20 - 25 minutes. Sprinkle on remaining cheese
and
bake until cheese melts, about 1 - 3 minutes.

Layered Tostada Bake

1 pound extra lean ground beef
1 medium onion -- chopped
1/2 cup taco seasoning mix
1 8 oz. can tomato sauce
1 16 oz. can refried beans
1 cup Bisquick baking mix
1/2 cup cornmeal
1/4 cup skim milk -- at room temperature
1 egg white
2 tablespoons olive oil
1 cup sour cream
1 egg white
2 cups cheddar cheese -- shredded

Preheat oven at 375 degrees and prepare a 12x7x2" baking dish, with
cooking spray.
Cook and stir beef and onion in a skillet until meat is brown. Stir in
seasoning mix, tomato sauce and beans. In a mixing bowl, combine baking
mix,
cornmeal, milk, egg white, and oil until moistened. Spread in dish. Spoon
meat mixture over dough. Mix remaining ingredients; spoon over meat
mixture.
Bake uncovered 30 minutes. Let stand 10 minutes before cutting

Camper's Pizza

12 ounces ground beef -- 80% lean
1 medium onion -- chopped
1/2 teaspoon salt
8 ounces refrigerated crescent rolls
8 ounces pizza sauce
4 ounces mushroom stems and pieces -- drained and chopped
2 1/4 ounces ripe olives -- pitted and sliced
1/3 cup green bell pepper -- coarsely chopped
4 ounces shredded Mozzarella cheese
1 teaspoon dried oregano leaves -- crushed

Cook ground beef and onion in well-seasoned 11 to 12-inch heavy skillet
with
heat-proof handle over medium coals* until no longer pink, stirring
occasionally to break up beef. Remove beef mixture to paper towel; season
with salt. Pour off drippings, leaving skillet "greased". Separate
crescent
roll dough triangles; place in skillet, pressing edges together to form
bottom crust and 1-inch rim up side of skillet. Spread half of pizza sauce
over dough; spoon ground beef mixture over sauce. Top with mushrooms,
olives
and bell pepper. Pour remaining sauce over all; sprinkle with cheese and
oregano. Place skillet in center of grid over medium coals (see notes).
Place cover on cooker and cook 20 to 30 minutes or until crust is lightly
browned.

Blazing Saddles Beef 'n' Beans

2 tablespoons olive
3 onions -- diced
2 jalapeno chile peppers -- seeded and diced
3 cloves garlic -- chopped
1 1/2 pounds ground beef
1 6 oz. can tomato paste
1 28 oz. can crushed tomatoes
1 teaspoon fresh ground black pepper
2 teaspoons paprika
2 tablespoons cumin
Tabasco sauce -- to taste
2 16 oz. cans red kidney beans -- rinsed and drained

Place a pot on high heat and warm 2 tablespoons of oil. Toss in onions,
jalapeno and garlic, and stir for about 3 minutes or until softened.
Remove
cooked onions, jalapeno and garlic to a separate bowl. Return pot to heat
and brown ground beef. When meat is brown and sizzling, add cooked onion,
mixture, tomato paste,crushed tomatoes, cracked pepper, paprika, cumin
powder and Tabasco to taste. Stir gently until combined, and add enough
water to just cover ingredients. Reduce heat and simmer for 1 hour. Check
after 55 minutes, and add red kidney beans.

Stuffing for Green Peppers or Cabbage

2 cups onion -- chopped
2 cloves garlic -- minced
3/4 cup rice
1 tablespoon paprika
6 ounces tomato paste
2 teaspoons ground ginger
2 tablespoons Italian seasoning
salt and pepper -- to taste
2 pounds ground turkey, pork or beef
1/4 cup chicken stock
1 16 oz. can tomato sauce

Preheat oven to 350 degrees.
Heat oil in a large skillet, over medium heat, and saute onion and
garlic
until onion is translucent. Add rice and stir until rice is lightly
browned.
Stir in paprika, tomato paste, ginger, Italian seasoning, salt pepper and
ground turkey. Mix well to combine and saute, stirring to crumble meat, 5
minutes. Stir in chicken stock and remove from heat.
Stuff mixture into green peppers or cabbage leaves, place in a baking
dish and cover with tomato sauce. Bake, covered, for 1 hour.

Casserole-Egg Noodle

1 pound ground turkey or lean ground beef
1 cup onion -- minced
1 cup green bell pepper -- minced
1 1/2 cups mushrooms -- sliced
1 3/4 pounds crushed tomatoes
2 cups tomato sauce
3 teaspoons chopped fresh basil
1/2 teaspoon oregano
1 bay leaf
salt and pepper to taste
3 teaspoons Worcestershire sauce
12 cups water -- salted
4 cups medium egg noodles
1/4 cup unsalted butter
3 cups cheddar cheese -- grated
2 cups fresh bread crumbs

Crumble the meat into a heavy skillet over high heat and stir until it
loses its red color. Add the onion and bell pepper and cook until the
onion
is translucent. Add the mushrooms and cook 5 minutes longer. Add the
tomatoes, tomato sauce, herbs, salt, pepper and Worcestershire sauce, and
simmer gently for 30 minutes. When the sauce has simmered 15 minutes cook
the noodles in the salted water until just tender. Drain and toss with the
butter.
Preheat oven to 350 degrees.
Place half the noodles in a 3 quart casserole and top with half the
cheese and half the sauce. For the second layer, add the remaining
noodles,
sauce, cheese then top with bread crumbs. Bake 30 minutes. Let sit 10-15
minutes before serving.

1 tablespoon olive oil
1 pound ground beef
1 14 oz can crushed tomatoes
1 14 oz can tomato sauce
1/2 cup red wine
3 cups beef stock or water
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
pinch salt
2 cups ditalini or elbow macaroni
16 ounces frozen corn -- thawed
6 ounces cheddar cheese -- grated

In a large skillet, over medium heat, saute onion and garlic in the oil
until onion is translucent. Add ground beef and cook until no longer pink.
Add crushed tomatoes, tomato sauce, wine, beef stock, basil, oregano and
salt. Increase heat to high, bring to a boil and slowly stir in ditalini.
Reduce heat to low and simmer, uncovered, for 10 minutes, stirring
occasionally. Add corn, stir and let simmer another 5 minutes.

Serving Ideas : Serve on individual plates and sprinkle with grated
cheddar
