Irish Soda Scones
Irish Herb Scones Irish Soda Scones 1 pound White Flour 1 teaspoon Baking Soda 1 teaspoon Cream of Tarter 1/2 teaspoon Salt 1 tablespoon Margarine 1 cup Buttermilk Preheat oven to 350 F. Sift dry ingredients. Cut in margarine. Add buttermilk a little at a time to make a stiff dough. Knead for two or three minutes. Roll out to 1/2 inch thick on a floured surface. Cut with a 3-inch biscuit cutter and place on a cookie sheet. Bake 15 minutes. When brown on top, turn and brown the other side. Makes 6 - 8 scones. Irish Herb Scones 1/2 pound Mealy potatoes 4 tablespoons Flour 1/4 teaspoon Salt 4 tablespoons Oil 2 tablespoons Chopped parsley 1/2 teaspoon Dried dill 1/4 teaspoon Savory 1/4 teaspoon Marjoram 1/4 teaspoon Powdered sage Oil for frying Boil or bake the potatoes, then pass through a foodmill. Mix the flour, salt, oil & herbs with the potatoes. On a floured board, roll this dough to a thickness of about 1/4 inch. Cut into triangles 3 or 4 inches wide.
