Pear Apricot Charlotte

Pear Bavarian

1-1/2 cups pear puree
5 teaspoons gelatin
1/3 cup water
4 egg yolks
4 egg whites
1/4 cup sugar
3 cups heavy whipping cream

Whip cream to soft peaks and reserve.
Sprinkle gelatin over water and let bloom.
Heat 1/2 cup of puree to a scald (careful not to burn) and add to
egg yolks whipping on high.
Heat gelatin to dissolve and add to yolks and puree, fold in the
remaining puree.
With a clean bowl whip egg whites to a foam then gradually add the
sugar, continue to whip on high until stiff peaks form.
Fold meringue into puree mix, then fold in whipped cream.
Transfer into pastry bag and reserve for later use.

Apricot Glaze

1 lb dried apricots
1/2 cup sugar
1 cup water

Add all ingredients to a heavy bottom pan and cook on low for about
one hour.
Puree in a blender and strain through a fine strainer.
Cool in refrigerator until needed.

Ladyfingers

5 egg yolks
5 egg whites
1/4 cup sugar
1 Tbsp sugar
1/3 cup cake flour

Heat oven to 375.
Whip the yolks and 1/4 cup of sugar to ribbon stage.
Whip the whites to a foam and add the 1 Tbsp of sugar, and
continue to whip stiff peaks.
Fold all ingredients together and place in a pastry bag with a
plain tip.
Pipe a zig zag pattern out on baking paper, sprinkle with rock
sugar and bake for ten minutes.

Dried Pineapple

1 pineapple

Heat oven to 200 degrees.
Skin the pineapple and slice 1/8 of an inch thick.
Using a cookie cutter, remove the core.
Pat dry under paper towels for two hours.
Dust baking paper with powered sugar, place pineapple on paper and
lightly dust the top and bake for about an hour.
To Build: Trim three sides of the ladyfinger, and smear the apricot
glaze on the non-sugar side. Place the cookie into a round mold. Pipe
the bavarian into the middle to the top. Cover and let set up for a
couple of hours.
To serve: Unwrap and place on the center of the plate with your
desired sauces, fresh fruit, or flowers. Place the pineapple in the
middle of the top and serve cold.
