Default Guinness Stout Chocolate Cake

Guinness Stout Chocolate Cake

Serves: 12 / Preparation time: 25 minutes / Total time: 1 hour 10 minutes.


Cake
1/4 cup cocoa powder
1/2 pound (2 sticks) unsalted butter
1 cup Guinness stout
2/3 cup dark cocoa powder
1 teaspoon salt
2 cups all-purpose flour
2 cups sugar
11/4 teaspoons baking soda
2 eggs
1/2 cup sour cream

Chocolate Frosting
1 cup (2 sticks) butter, softened
3 cups confectioners' sugar
2 tablespoons milk
1 teaspoon vanilla
1 cup semisweet chocolate chips, melted

Preheat the oven to 350 degrees. Lightly grease two 8-inch springform pans
and dust the pans with the 1/4 cup of cocoa powder.
In heavy saucepan heat the butter, Guinness and dark cocoa powder until
the
butter is melted and the mixture is smooth. Remove the pan from the heat
and
let the mixture cool.
In a large bowl, sift together the salt, flour, sugar and baking soda.
Add the Guinness-cocoa mixture and beat for 1 minute on medium speed.
Add the eggs and sour cream and beat for 2 minutes on medium speed.
Evenly divide the batter into the prepared pans and bake for 25 to 30
minutes or until an inserted knife comes out clean.
While the cake is baking, make the frosting. In a medium bowl, beat
together
the butter, confectioners' sugar, milk and vanilla. Stir in the melted
chocolate chips and mix until smooth.
Remove the cakes from the oven and cool 10 minutes, remove the pans' sides
and cool the cake completely before frosting. Use a serrated knife to even
the tops, if necessary, and frost.
