Shrimp De Jonghe

3 lbs. shrimp, cooked
1 cup bread crumbs
1 tsp. salt
2 cloves garlic
1 cup butter
1/8 tsp. red pepper
1/8 tsp. paprika
1/4 cup parsley, chopped
2/3 cup white wine of leftover Champagne

Cream together garlic, salt and butter. Add bread crumbs, seasonings,
parsley and wine. Mix well. Butter a 2 quart flat baking dish. Place a
layer of shrimp on the bottom, then spread a layer of de Jonghe mix on
top. Alternate layers until all shrimp is gone, ending with bread crumb
mix on top. Bake in 375 degree oven for 15 to 20 minutes.

I serve this with a side dish of Meatless Spaghetti in a Seasoned Sauce
and a nice tossed salad.

Shrimp De Jonghe

1 stick butter (or butter), melted
2 cloves garlic, minced
1/3 cup parsley, chopped
1/2 tsp. paprika
1/2 cup dry sherry
1 to 1 1/2 cup Ritz style crackers, crushed
1 lb. med. size shrimp, cleaned and shelled

To melted butter, add garlic, parsley, paprika, and sherry. Add cracker
crumbs and toss. Place shrimp in baking dish. Spoon the butter mixture
over the shrimp. Bake at 350 degrees for 20 minutes or until heated
through. Sprinkle with chopped parsley. Serves 8. Serve with crackers.

NOTE: May also be made as main course to serve 4.

Dash cayenne pepper
1/2 cup cooking sherry or any sherry
1 1/2 cup soft bread crumbs

Boil shrimp 5 minutes in salted water. Cool and peel. To melted butter,
add garlic, parsley, paprika, cayenne and sherry. Mix together and add
bread crumbs. Toss. Place shrimp in buttered baking dish and pour
mixture over. Bake at 325 degrees for 25 minutes. Sprinkle with
additional chopped parsley. Serves 6

Buttery Shrimp De Jonghe

2/3 cup Land O Lakes Sweet cream butter
2 tbsp. dried chives
1/2 tsp. garlic powder
1/8 tsp. pepper
2 (10 oz.) pkgs. frozen cocktail size (1 1/2 inch) shrimp (not
breaded),
thawed, drained
1 1/2 cup crushed thin bacon flavored crackers

Preheat oven 350 degrees. In heavy 2 quart saucepan melt butter over
medium heat (4 to 5 minutes). Add chives, garlic powder and pepper;
stir to blend. Dip shrimp into melted butter then roll in crumbs to
coat. Layer shrimp in 8 inch (1 1/2 quart) baking dish. Add remaining
crumbs to remaining butter; stir to blend. Sprinkle shrimp with
remaining crumbs. Bake near center of 350 degrees oven for 24 to 30
minutes or until shrimp are tender. Yield: 4 servings.

Shrimp De Jonghe

1/2 cup flaked coconut
1/4 cup dry bread crumbs
1/3 cup peanut oil
3 tbsp. chopped parsley
1 tbsp. minced garlic
3/4 tsp. salt
1/4 tsp. paprika
Dash cayenne
2 lbs. uncooked shrimp
1/2 cup sherry

Combine oil, coconut, bread crumbs, chopped parsley, paprika, cayenne,
salt, and minced garlic. Reserve 1/4 cup of mixture for topping.

Toss shelled and deveined shrimp lightly in remaining mixture until
shrimp is well coated. Turn into lightly oiled casserole. Pour sherry
over shrimp and sprinkle with reserved mixture.
