Fettucine with Shrimp and Snow Peas

1 cup cooked fettucine
3/4 teaspoon olive oil
1 garlic clove -- minced
6 ounces medium shrimp -- peeled and
deveined
1 cup snow peas
1 1/2 tablespoons chopped basil
1 1/2 teaspoons grated Parmesan cheese

Cook fettuccine in boiling salted water cooked. Drain
pasta and keep warm. While pasta is cooking, heat oil
in a heavy nonstick skillet over medium high heat.
Sauté garlic, shrimp and snowpeas 3-4 minutes stirring
frequently, until shrimp are pink and cooked
throughout. Stir in basil and salt and pepper to
taste. Combine shrimp and snow peas mixture with
pasta in a serving bowl. Serve with Parmesan cheese.

New Orleans-Style Barbecue Shrimp

vegetable cooking spray
1 tablespoon olive oil
1 cup sliced green onions
6 garlic cloves -- minced
1 cup chicken broth
1/2 cup fresh lemon juice
1 1/2 tablespoons paprika
1 teaspoon rosemary
1 teaspoon basil
1 teaspoon oregano
3/4 teaspoon salt
1/2 teaspoon ground red pepper
1/2 teaspoon pepper
6 bay leaves
2 1/4 pounds medium fresh shrimp

Coat a large nonstick skillet with cooking spray; add
oil. Place over meidum high heat until hot. Add
green onions and garlic; saute' until tender. Add
broth, lemon juice, paprika, rosemary, basil, oregano,
salt, red pepper, pepper, and bay leaves, stirring
well. Bring to a boil; cover, reduce heat, and simmer
10 minutes, strirring occasionally. Uncover and
simmer an additional 5 miinutes, stirring frequently.
Remove from heat; cover and let stand at room
temperature 2-3 hours, stirring occasionally.

Peel and devein shrimp. Uncover sauce; bring sauce to
a boil over medium heat, stirring occasionally. Add
shrimp to sauce; cook 5 minutes or until shrimp are
done, stirring occasionally. Remove and discard bay
leaves.
