While these are not from a Chicago restaurant they are from my Polish
Sister-in-law & her Mom.

Polish Cabbage Rolls (Golabki)

Recipe By : Pete Romfh, Houston, TX
Serving Size : 4 Preparation Time :0:00
Categories : Misc. Ethnic

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 head cabbage
1 pound ground beef
1/2 pound ground pork or veal
(optional)
16 ounces can tomato sauce
8 ounces can tomatoes
2 cups cooked rice
2 eggs
1 onion finely chopped
2 tablespoons margarine
Salt and pepper to taste

Remove the core from the cabbage. Put the cabbage in boiling water and
remove the leaves as they soften. Saute the onions in the margarine
for a short time. In a bowl add the onions, meat, rice, eggs and salt
and pepper, mix this well. Place about 2 Tbsp. of the meat mixture in
the center of a cabbage leaf and roll. Put the meat rolls in a large
pot and pour the tomato sauce onto the rolls. Then squeeze tomatoes
from can and arrange on top of the rolls. Simmer over low heat for 2

Polish Cucumber Salad (Mizeria)

Recipe By : Pete Romfh, Houston, TX
Serving Size : 4 Preparation Time :0:00
Categories : Misc. Ethnic

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 large cucumber
1/4 pint of sour cream
1 teaspoon of salt
Juice of half a lemon
2 tablespoons of freshly chopped dill

Peel and slice the cucumber. Place in a colander, sprinkle with salt
and leave to drain for half an hour. Rinse and pat dry. Arrange the
cucumber in a dish. Make a dressing from the sour cream and lemon
juice and pour it over the cucumber. Sprinkle with dill and serve.

Universal in Poland this simple dish is surrounded by legends
associated with the 16th Century Queen Bona. Homesick for Italy the
Queen consumed it in vast quantities to relieve her misery - hence the
name! The name may also be associated with the gastronomic boredom of
Lenten fasting!

Polish Stuffed Cabbage (Golomki)

Recipe By : Pete Romfh, Houston, TX
Serving Size : 4 Preparation Time :0:00
Categories : Misc. Ethnic

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 pound ground meat
(mixture of beef, pork & sausage)
1/2 cup rice
1/2 cup water
2 tablespoons margarine
1/4 cup onion
2 eggs
salt and pepper to taste
Italian Seasoning
1 can tomato sauce
1 medium head cabbage

Put cabbage in large pot of water and simmer removing core to make it
easy to take off each leaf of cabbage.
In the meantime, put water in small pan and bring to a boil. Turn off
heat and put in instant rice. Or make rice any way that you would.
Melt margarine in small pan and saute the diced onion; simmer until
transparent. In large mixing bowl put meat, rice, onion, eggs, salt
and pepper. Mix well and fill each cabbage leaf with mixture; fold
leaf to enclose mixture.
Line bottom of pan with outer large leaves, putting stuffed leaves on
top, covering them with more leaves.
Mix the tomato sauce with the Italian seasonings; pour over top.
Bake in 350 degrees oven, covered, or on top of the stove.

skewers

Marinate the meat overnight.
Get the grill good and hot while placing meat, vegetables, and
fruit such as pineapples or cherries on the skewers.
Don?t be afraid to use a variety of meats.
Grill to medium rare,
serve with garlic cous-cous and sautéed asparagus.
Coffee and sherbet for desert then walnuts, cheese, and port.
Cigars for the gentlemen (and ladies if they so desire)!

Crock-Pot Crack Baby

When the quivering, hopelessly addicted crack baby succumbs to death,
get him immediately butchered and into the crock-pot, so that any
remaining toxins will not be fatal. But don?t cook it too long,
because like Blowfish, there is a perfect medium between the poisonous
and the stimulating. Though it may not have the same effect on your
guests, a whole chicken cooked in this fashion is also mighty tasty.

1 newborn - cocaine addicted, freshly expired, cleaned and butchered
Carrots
onions
leeks
celery
bell pepper
potatoes
Salt
pepper
garlic, etc
4 cups water

Cut the meat into natural pieces and brown very well in olive oil,
remove, then brown half of the onions, the bell
