Ethnic Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 head cabbage 1 pound ground beef 1/2 pound ground pork or veal (optional) 16 ounces can tomato sauce 8 ounces can tomatoes 2 cups cooked rice 2 eggs 1 onion finely chopped 2 tablespoons margarine Salt and pepper to taste Remove the core from the cabbage. Put the cabbage in boiling water and remove the leaves as they soften. Saute the onions in the margarine for a short time. In a bowl add the onions, meat, rice, eggs and salt and pepper, mix this well. Place about 2 Tbsp. of the meat mixture in the center of a cabbage leaf and roll. Put the meat rolls in a large pot and pour the tomato sauce onto the rolls. Then squeeze tomatoes from can and arrange on top of the rolls. Ethnic Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large cucumber 1/4 pint of sour cream 1 teaspoon of salt Juice of half a lemon 2 tablespoons of freshly chopped dill Peel and slice the cucumber. Place in a colander, sprinkle with salt and leave to drain for half an hour. Rinse and pat dry. Arrange the cucumber in a dish. Make a dressing from the sour cream and lemon juice and pour it over the cucumber. Sprinkle with dill and serve. Universal in Poland this simple dish is surrounded by legends associated with the 16th Century Queen Bona. Homesick for Italy the Queen consumed it in vast quantities to relieve her misery - hence the name! Ethnic Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound ground meat (mixture of beef, pork & sausage) 1/2 cup rice 1/2 cup water 2 tablespoons margarine 1/4 cup onion 2 eggs salt and pepper to taste Italian Seasoning 1 can tomato sauce 1 medium head cabbage Put cabbage in large pot of water and simmer removing core to make it easy to take off each leaf of cabbage. In the meantime, put water in small pan and bring to a boil. Turn off heat and put in instant rice. Or make rice any way that you would. Melt margarine in small pan and saute the diced onion; simmer until transparent. In large mixing bowl put meat, rice, onion, eggs, salt and pepper. Mix well and fill each cabbage leaf with mixture; fold leaf to enclose mixture. Line bottom of pan with outer large leaves, putting stuffed leaves on top, covering them with more leaves. Mix the tomato sauce with the Italian seasonings; pour over top. Marinate the meat overnight. Get the grill good and hot while placing meat, vegetables, and fruit such as pineapples or cherries on the skewers. Don?t be afraid to use a variety of meats.
