Curried Baked Beans

This Curried Baked Beans recipe makes 8 servings.

2 apples, pared and diced
1 teaspoon curry powder, or to taste
1/2 cup golden raisins
2/3 cup honey
1 small onion, diced
1 tablespoon prepared mustard
1 teaspoon salt
1 lb. small white beans
1/3 cup sweet pickle relish
6 cups water


Combine beans, water and salt. Let stand overnight. Bring to a boil;
reduce heat and simmer 2 hours, adding water if needed. Drain beans,
reserving liquid. Combine beans with remaining ingredients. Pour into
2-1/2 quart casserole. Add enough bean liquid to barely cover. Bake at
300°F about 1-1/2 hours, adding more liquid if needed.

Curried Baked Beans

1 pound of white beans (navy)
2 teaspoons of butter
2 cloves of garlic bruised
1 large onion chopped
3 strips of fried bacon crumbled
2 tablespoons of dark brown sugar
2 teaspoons of Worcestershire
1 teaspoon of curry powder
4 tablespoons of Molasses
5 tablespoons of Chili Sauce
2 tablespoon dry Coleman's mustard
1 1/2 teaspoon salt
1/2 cup rum
1 1/2 cups tomato juice
3 strips uncooked bacon

Bring a large pot of water to the boil. Add beans and return to
boiling. Turn off heat, cover and let stand for 1 hour. Heat oven to
275o. Grease casserole with butter and rub with garlic, discard. Drain
beans. Add remaining ingredients, except tomato juice and bacon, mix
well. Pour on 1/4 cup of tomato juice and place bacon on top. Cover and
bake for 8 or more hours, until tender, adding tomato juice as top of
beans dry out.
