Default Smashed Potatoes

I believe that Jamie Oliver aka "The Naked Chef" does something
similar, but this is my version.

Smashed Potatoes

2 medium potatoes
blue cheese
fresh herbs
salt
pepper
olive oil
butter

Bake the potatoes either in a microwave or conventionally. Remove and
let stand for ten minutes, then press with the heel of your hand to
flatten (like a thick pancake).
Heat olive oil and butter in a frying pan. Add the flattened potatoes
and fry until the skin is crisp and brown, turning once.

Add a slice of blue cheese to the top of each potato and cover pan to
soften cheese.
Remove from pan, garnish with fresh herbs, salt, and pepper, and serve
while hot.
