Funfetti Cookies

18 1/4 ozs Funfetti cake mix
1 1/2 cup unbleached flour
1/4 cup olive oil
4 whole egg whites -- slightly beaten
8 ozs reduced fat vanilla frosting
1/4 cup sprinkles, rainbow mix

Preheat oven to 375. In a mixing bowl, combine cake mix, flour, oil, and
egg whites. Mix well. Stir in sprinkles from cake mix. Shape dough into
one inch balls. Place two inches apart on prepared baking sheets. With
bottom of glass dipped in flour, flatten to 1/4"" thickness. Bake for 8
minutes or until edges are light brown. Cool completely. Spread frosting
over cookies. Immediately top each cookie with a few sprinkles. Allow
frosting to set before storing.




German Chocolate Crinkle Cookies

Pillsbury America's Bake-off, 1978

1 pkg Pillsbury Plus German chocolate cake mix
1/2 cup Instant Mashed potato flakes
1 tsp Cream of tartar
1 tsp Cinnamon
3/4 cup Butter/margarine , melted
3 Tbsp Milk
1 Egg
1/2 cup Chopped nuts
1/4 cup To 1/2 cup sugar

Frosting
1 cup Powdered sugar
tsp Unsweetened cocoa
1 Tbsp Soft margarine or butter
1 Tbsp To 2 Tbsp milk

Heat oven to 350. Combine first 7 ingredients; blend well. Stir in nuts.
Let stand 5 minutes. Drop by rounded teaspoonfuls into sugar; gently toss
until sugar coated. Place 2 inches apart on ungreased cookie sheets. Bake
at 350 for 8 to 10 minutes. (Cookies will be soft in center.) Cool 1
minute; remove from pans. If desired, frost cookies. Combine frosting
ingredients; blend until smooth. Spread on cooled cookies. Yield: 4 to 5
dozen. High Altitude -- above 3500 feet: bake at 375 for 10 to 12 minutes.




Double Chocolate Cake Mix Cookies

1 pkg Devil's food cake mix with pudding
1/2 cup Vegetable oil
2 large Eggs
6 oz Semisweet chocolate morsels

Combine first 3 ingredients, and beat at medium speed with an electric
mixer until blended. Stir in chocolate morsels. Drop by rounded
teaspoonfuls about 2"" apart onto ungreased baking sheets. Bake at 350 F
for 10 min. Cool on pan for 5 min; remove to wire racks to cool
completely.



Easy Chocolate Butterscotch Chip Cookies

1 package chocolate cake mix
1/2 cup vegetable oil
2 eggs
1 2/3 cups butterscotch chips
1/2 cup chopped pecans -- optional

Combine cake mix, oil and eggs in large bowl. Stir in chips and nuts. Drop
by rounded tablespoons onto ungreased baking sheets. Bake at 350 degrees
for 8-10 minutes or until centers are just set. Cool on baking sheets for
2 minutes; remove to wire racks to cool completely.




Cookies in a Jiffy

1 package yellow cake mix
2/3 cup quick-cooking oats
1 egg
1/2 cup butter or margarine -- melted
1/2 cup red and green Holiday M&Ms or butterscotch chips

In a mixing bowl, beat the cake mix, oats, egg and melted butter. Stir in
M&Ms. Drop by tablespoonfuls 2-inches apart onto ungreased cookie sheet.
Bake at 375-degrees for 10-12 minutes or until lightly browned.
Immediately remove to cool.




Lemon Crisp Cookies

1 package lemon cake mix
1 cup Rice Krispies
1/2 cup butter or margarine -- melted
1 egg -- beaten
1 teaspoon lemon peel

In a large bowl, combine all ingredients until well mixed (dough will be
crumbly). Shape into 1-inch balls. Place 2-inches apart on ungreased
baking sheets. Bake at 350-degrees for 10-12 minutes or until set. Cool
for 1 minute; remove from pan to a wire rack to cool completely.
