Title: Raisin Pie
Categories: Pies, PennDutch
Yield: 8 Servings

1 cup Raisins
2 cup ;Water
1 1/2 cup Sugar
4 Tbsp Flour
1 Egg; well beaten
1 Tbsp Lemon juice
2 Tbsp Lemon rind, grated
1/4 tsp Salt
*Pastry

Wash raisins and soak in cold water for 3 hours. Drain. Combine the 2
cups water, the raisins, sugar and flour which have been mixed
together, salt, lemon juice and rind, and the egg. Mix thoroughly and
cook over hot water for 15 minutes, stirring occasionally. Cool. Pour
into pastry- lined pan. Cover with narrow strips of dough,
criss-crossed. Bake at 450 F. for 10 minutes. Reduce heat to 350-F
and bake 30 minutes.

Title: Sour Cream Raisin Pie
Categories: Pies
Yield: 8 Servings

1 Pie shell, 9" unbaked
-unpricked,
1 cup Sugar, granulated
1 Egg; beaten
1 cup Sour cream
1 cup Raisins or sultanas
1 pn Salt
1/2 tsp Vanilla

Beat the egg and sugar together until the sugar is partially
dissolved. Add the sour cream, raisins, salt and vanilla. Blend
together and pour into an unbaked pie shell. Bake in a preheated 400
F. oven for 10 minutes. Reduce the heat to 350, and bake until a
silver knife blade inserted in the centre comes out clean. Sprinkle
walnuts or pecans over the top if you wish, and serve with whipped
cream.

Title: Raisin & Vinegar Pie

Yield: 8 Servings

1/2 cup Raisins
1/4 cup Butter; softened
1/2 cup Sugar, granulated; plus 2 T
1/2 tsp Cloves, ground
1/4 tsp Allspice, ground
1/2 tsp Cinnamon, ground
1/2 tsp Vanilla extract
2 Egg; separated
1/4 cup Vinegar
1/4 cup ;Water
1 Pie shell, 9"; unbaked

Cook raisins in boiling water to cover for 5 minutes; drain raisins
and set aside. Cream butter and sugar; beat in spices and vanilla.
Stir in egg yolks, vinegar, water and raisins. Beat egg whites until
stiff; fold into mixture. Pour into pastry shell and bake at 350 F.
for 1 hour.
