These ever-popular chocolate flavoured coconut muffins are easy to make,
yet so delicious. This recipe gives you approximately 30 muffins. Regitze's Muffins 300 g (10.6 oz) butter 4 large eggs 350 g (12.3 oz) sugar 90 g (3.2 oz) wheat flour 280 g (9.9 oz) grated, desiccated coconut 100 g (3.5 oz) chopped hazelnuts 200 g (7.1 oz) dark, unsweetened chocolate 1 vanilla pod, seeds of Melt the butter gently and let it cool a bit while you prepare the other ingredients. Whip eggs and sugar until light and fluffy. Mix flour, coconut, vanilla, then gently fold into the eggs. Add the butter, the chopped nuts and bashed-up chocolate and fold gently into the dough. Pour dough into muffin cups (I use the paper type), and bake at 200C (390F) for 15 minutes. Let cool on rack. These muffins are even better the day after they're baked.
