Default Ratatouille

Ratatouille

1 green capsicum (bell pepper), seeded and thinly sliced
1 onion, thinly sliced
1 tablespoon (4 tsp) oil
2 cloves garlic, finely chopped
100 g (3 1/2 oz) baby beans, trimmed and halved
1 medium eggplant, trimmed and cubed
1 (400 g/14 oz) can chopped tomatoes
1 tablespoon (4 tsp) chopped basil

Place capsicum, onion, oil and garlic into a large microwave-safe dish. Cover
with a lid or plastic wrap. Cook on HIGH(100%) power for 2 minutes. Add beans,
eggplant, tomatoes and basil. Mix well. Cook covered, for 4 to 5 minutes, stirring
once. Stand for 3 to 4 minutes before serving. Top with extra basil leaves if
desired.
Serves 4.
