Default Wacky Oatmeal Spice Cake

Wacky Oatmeal Spice Cake

1-3/4 cups boiling water
1-1/2 cups quick oats
3/4 cup butter (or margarine)
1 cup sugar
2 cups brown sugar
1-1/2 tsp. cinnamon
2 cups barley flour (all-purpose flour should work too)
2 Tbsp. soda
2 Tbsp. lemon juice

Put oats & butter in a bowl; pour boiling water over & let stand 20
minutes. Preheat oven to 350 degrees. Grease & flour 13 x 9 baking pan. In
a large bowl, thoroughly stir together flour, sugars, cinnamon, & soda.
Add lemon juice to oat mixture and stir well. Add to dry ingredients and
mix well. Pour into baking pan and bake for 30 minutes.

Icing

2 Tbsp. butter
1 cup sifted confectioners sugar
1/2 tsp. vanilla
2 Tbsp. milk
1/2 tsp. lemon juice
1 drop maple flavouring

Cream butter and about 1/2 cup powdered sugar. Add vanilla, lemon juice,
and maple. Slowly add remaining sugar. Slowly add milk last you may not
want to use all of it.
