Default Sweet Potato Souffle

Sweet Potato Souffle

3 cup mashed potatoes, cooked and mashed (canned okay!)
1/4 cup butter, melted
1/2 cup evaporated milk
3 eggs
1 cup sugar
1/4 tsp salt

Mix the above ingredients well. Pour into a buttered baking dish. Top with
the following:

1/4 cup self rising flour (regular flour okay, too!)
2 Tbsp butter, melted
1/2 cup light brown sugar
1/4 cup chopped pecans

Blend these ingredients by hand using a pastry blender until a coarse,
crumb-like mixture. Sprinkle on top of sweet potato mix. Bake uncovered at
350* until brown (15-20 minutes)
