Here are some yellow squash recipe I have. Those not labeled I have
tried and make often.

Aunt Fannies Squash Casserole

3 pounds summer squash
1/2 cup onions, chopped
1/2 cup butter, melted
2 large eggs, beaten
1/2 cup saltine crumbs
1 teaspoon salt
1/2 teaspoon black pepper
Saltine crumbs

Wash squash, cut in half lengthwise, then in 1/4-inch slices. Combine
with chopped onion and cook in water to barely cover until both are
tender. Drain thoroughly, pressing out excess water with back of spoon.
Mash squash and onion with potato masher. Mix with half the butter, the
cracker crumbs, eggs, sugar, to taste, salt and pepper. Pour into
greased casserole dish.
Pour remaining butter on top and sprinkle with additional cracker
crumbs. Bake at 375 degrees for 45 to 60 minutes, or until top is golden
brown and bubbly. Yields: 6 servings

Note: This recipe is from a restaurant in Smyrna, Georgia
called Aunt Fannie's Cabin.
Aunt Fannie was a freed slave of an old Georgia
family who remained with the
family until her death. The menu at the Cabin
represented many of the dishes that
Aunt Fannie prepared for the family. A most
unique place and this recipe is very
good as I have eaten there several times. My
wife's parents liver in Smyrna and when
we visited them they took us to eat there.


Yellow Squash Casserole

Not TnT

2 cup yellow squash, cooked and mashed
1/2 cup butter, melted, divided
1 teaspoon salt
1/8 to 1/4 teaspoon black pepper (or to taste)
1/4 cup to 1/2 cup peeled and chopped Vidalia or sweet type onion
3/4 cup to 1 cup saltine cracker crumbs or crushed potato chips
2 large eggs, beaten

In a heavy saucepan, cook onion with half the melted butter, salt and
black pepper. Add squash. Stir to combine. Reduce heat to low. Cover
with lid. Cook until tender. Add very little water and ONLY if needed.
Squash has water in it. Keep the lid on it. When done, mash squash. Do
NOT drain. Mix with half of the cracker crumbs or potato chips and the
beaten eggs. Pour into a greased 2 quart casserole. Sprinkle with
remaining crumbs or chips. Drizzle with rest of melted butter.
Bake at 350 degrees for 30 minutes. Yields: 8 servings.


Yellow Squash Casserole Not TnT

Note: This is a good way to use your yellow summer squash.

2 yellow summer squash
1 large egg
10 saltine crackers crushed
3 tablespoons butter melted
8 oz shredded cheddar cheese
1\2 cup milk
Salt and pepper to taste.

Preheat oven to 350 degree. Clean and take the ends off squash. Slice
and put in a pan of water and boil until fork tender. Drain squash and
the mash it. Whip your egg in the milk and pour on mashed squash. Add
the rest of ingredients and stir all together. Put in buttered casserole
dish and bake for 1 hour. You can adjust this recipe to your serving
sizes.



Grandmaws Squash Pudding

2 cups cooked yellow squash
Water to parsley cover squash
1/2 teaspoon
1/2 cup sugar
2 large eggs
3/4 cup sugar
1/2 cup milk
1/4 teaspoon salt
1/2 teaspoon pure vanilla extract
2 tablespoons cornstarch
2 tablespoons milk
1 1/2 tablespoons butter or margarine
1/4 teaspoon cinnamon
1 tablespoon sugar

Preheat oven to 350 degrees. Place cut up squash into a saucepan with
a lid. Add water and salt, cook stirring occasionally until very tender.
Mash enough squash to make 2 cups. To squash mixture add 1/2 cup sugar,
stir well. Set aside. Slightly beat eggs add remaining, sugar, milk,
salt, and vanilla. Beat until well blended, set aside. Dissolve
cornstarch into remaining milk mix with squash mixture. Then mix in egg
mixture. Spray a 13x 9x 2 baking dish with cooking spray. Pour squash
mixture into baking dish, dot with butter. Mix cinnamon and sugar
together. Sprinkle this mixture over top of pudding. Bake in preheated
oven for about 45 minutes, or until a knife inserted in center comes out
clean.

Note: Mom has an easier way to do this and it work well.
Place cooked squash into the bowl of a food processor. Add 1 1/4 cups
sugar and pulse machine once or twice. Add eggs, the milk, salt, and
vanilla pulse once or twice again. Mix the cornstarch with the 2
tablespoons milk, mixing well. Add this to the processor and blend until
well mixed. Then continue as the above recipe says.
