Flaxseed Crackers

Yield: 40 to 50 crackers
1/2 cup flaxseeds
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon garlic salt
2 tablespoons butter, at room temperature
1/2 cup 2 percent or whole milk
Olive oil
Sea salt

Combine flaxseeds, flour, baking powder, garlic salt and butter in a
mixing bowl. Beat with an electric mixer on low to medium speed until the
mixture is the consistency of cornmeal. Slowly beat in milk. Form dough
into a ball; chill for 10 minutes. Preheat the oven to 375 degrees. Divide
the dough in half. Roll out one portion at a time until flat on a lightly
floured board. Transfer each sheet of dough to an ungreased baking sheet.
Mist top of dough (or spread very lightly) with olive oil. Sprinkle
lightly with salt. Using a pizza cutter, cut into diamonds about 2 1/2
inches long. Bake until lightly browned, 20 minutes. Let cool 5 minutes on
the baking sheet, then let cool completely on wire racks. When stored in a
well-sealed container, these keep for several weeks

approximations.

Per cracker (based on a yield of 50): 27 calories; 1g fat (33 percent
calories from fat); 0.5g saturated fat; 1mg cholesterol; 1g protein; 3.5g
carbohydrate; no sugar; 0.5g fiber; 25mg sodium; 10mg calcium; 20mg
potassium.
