Here is a delicious Low Carb version of Rice, Green chili and Sour Cream
Casserole

"Rice", Chilies and Sour Cream Casserole

1 whole head of cauliflour
8 oz sour cream
1 can diced green chilies
1/2 pound of Monterey Jack Cheese
Salt

Cut the florets off the head of Cauliflour, trim the stems. Then pass
through a cheese shredder attachment of a food processor. (This is
easiest) Toss the shredded cauliflour with salt.
Shred the cheese, set aside
Mix the 8 oz of sour cream with the whole can of diced green chilies.
Layer the ingredients in the following order;
Cauliflour 1 inch thick layer
Sour cream/chili to cover to edges
Cheese to cover
repeat ending with a layer of cheese on top.
Make sure to use all the sour cream, it will make it moist.

Bake in a 350 degree oven until browned and bubbly. About half hour.
