Holiday Pecan Pie
1/2 cup dark brown sugar 1/2 cup butter, melted 1 tsp. vanilla 1 cup light corn syrup 2 tsp. flour 1/4 tsp. salt 3 eggs, beaten 2 Tbsp. light rum 1 cup pecan halves, broken 4 oz. dark chocolate, medium chopped 1/3 cup coconut 1 deep 9" pie shell, raw Combine brown sugar, melted butter and vanilla with a whip and mix well. Stir in corn syrup, flour, salt, eggs and rum until well incorporated. Lay pecans, chocolate and coconut in bottom of raw pie shell and pour liquid mixture over all. Cover edges of pie shell with aluminum foil and bake in 350 degree oven 20 minutes. Remove foil from edges of pie crust, rotate pie in oven 180 degrees, and cook another 20 minutes or until filling is just set. -- Rec.food.recipes is moderated by Patricia Hill at .
