Lima Beans With Pine Nuts
2 to 3 tablespoons olive oil 1 pound frozen baby lima beans 3 tablespoons pine nuts one-half teaspoon salt Heat olive oil in a wide, heavy skillet over high heat until hot. Add lima beans and shake the skillet to distribute them over the bottom of the pan. As the limas heat, mince pine nuts very fine. When the limas have cooked long enough to brown a little, add pine nuts and salt and stir. Lower heat to medium and continue to cook, stirring occasionally, until limas are cooked through and the pine nuts smell toasty, about five or 10 minutes. Serves four.
