Almond Financier
submitted by dave from PA, US This recipe makes 2 (two) 8x13-inch rectangular pans or 2 (two) 9-inch round pans. Prepare batter one day in advance. 1 lb butter 15 egg whites 1 1/2 lb confectioner's sugar 7 oz almond flour 7 oz all-purpose flour Prepeat oven to 350 F. Mix confectioner's sugar, almond alour and all-purpose flour together. Lightly whip egg whites until fluffy. Mix whites into dry ingredient mixture, slowly incorporate the brown butter and chill overnight.
