Default Good Shepherd's Pie---British

Good Shepherd's Pie

Serving Size : 4 Preparation Time :0:10

1 Tbsp oil
1 medium onion -- peeled and finely chopped
1/2 tsp dried thyme
3 medium Carrots -- peeled and grated
1 bay leaf
400 grams tomatoes -- (14 oz) tin chopped
400 grams green lentils -- (14 oz) tin
2 Tbsp water -- or stock
Salt and pepper
100 grams Mashed Potato Flakes -- (3-1/2 oz) or make your own
2 tsp whole grain mustard
25 grams red Leicester cheese -- (1 oz)

Fry the onion in the oil until softened. Add the thyme, carrots, bay leaf,
tomatoes, lentils, and water and cook for 10 minutes. While this is
cooking, prepare the mash according to the instructions or make your own
and add the mustard. Taste, season and remove the bay leaf. Spoon into an
ovenproof dish top with mustard mash and sprinkle the cheese on. Grill on
a high heat for two-three minutes until the cheese melted, then serve.
