Beef Stew
Easy Meatballs Beef & Macaroni Chili Skillet Quick Tomato Beef Beef And Rice Rice & Meat Delight Round-Up Bean Casserole Here are some more Gluten-Free recipes that I make for my Mom that you can try. Beef Stew 1 tsp. oil 2 lb. boneless beef round steak, trimmed of fat, cut into 1 inch pieces 1 cup chopped onion 1 lb. potatoes, cut into 1 in. cubes 2 cup frozen mixed vegetables 1 cup carrots, sliced 1 cup celery sliced 3 cup vegetable juice cocktail Heat oil in Dutch oven over medium-high heat until hot. Add beef and onions; cook and stir 4 to 6 minutes or until beef is browned. Add all remaining ingredients; mix well. Bring to boil. Reduce heat to low; cover and simmer 1 1/2 to 2 hours or until beef and potatoes are tender. I made this in my crackpot. Not sure how long I cooked it. I just made sure the beef and potatoes were done. Easy Meatballs 1 lb. lean ground beef 1 cup Gluten-Free rice crisp cereal (find at a health food store or health food section of grocery store) 1 egg 1 Tbsp. minced onion 1 tsp. salt 1/2 tsp. pepper SAUCE: 3 Tbsp. brown sugar 1/8 tsp. nutmeg 1/4 cup catsup 1 tsp. dry mustard Mix together ground beef, cereal, egg, onion, salt and pepper. Form into balls and place in 8 x 8 inch baking dish. Mix together sauce ingredients and pour over meatballs. Bake 45 minutes to 1 hour at 350 . Sometimes when I am in a hurry I just press the meat into the pan and top it with the sauce to make a meat loaf. When I make them for holidays I often make the meatballs ahead of time and freeze them (uncooked). When I am ready to use them, I thaw them out put the sauce on them and bake as usual. Beef & Macaroni Chili Skillet 1 lb. ground beef 1 cup uncooked corn or rice elbow macaroni (find at a health food store or health food section of grocery store) 1/2 cup chopped onion 2 1/2 tsp. salt 1 1/2 tsp. chili powder 1 tsp. sugar 1/2 tsp. pepper 2 1/2 cup hot water 1 (6 oz.) can tomato paste Brown ground beef in large skillet and drain. Add uncooked macaroni, onion, salt, chili powder, sugar and pepper. Stir in hot water, cover and cook 10 minutes. Combine tomato paste and 1/4 cup water; add to meat mixture and cook 10 minutes. VARIATION: Substitute 1 package of taco seasoning for chili powder. (Be sure to read the label on the taco seasoning as some contain flour!) Quick Tomato Beef 10 oz. ground beef 1 - 14 1/2 oz. can diced tomatoes 1/8 tsp. pepper 1 - 14 1/2 oz. can sliced new potatoes, drained Onion Brown meat and then drain. Add tomatoes and pepper to skillet. Cook 5 to 8 minutes or until slightly thickened, stirring often. Stir in potatoes, heat through. I used diced canned diced potatoes and they worked fine. Beef And Rice 1 lb. lean ground beef 1 sm. onion, chopped 2 cloves garlic, minced 1 ribs celery, chopped 1 - 14.5 oz. can diced tomatoes 1 cup white rice 1 1/2 cup water 1/4 tsp. salt Brown beef in heavy flame proof Dutch oven. Stir in onions, garlic and celery and saute for a few minutes. Add remaining ingredients and bring to boil. Cover and move to 350 oven for 30 minutes. Rice & Meat Delight 1 cup water 1 cup minute rice 2 Tbsp. butter 1 lb. ground beef garlic salt, salt and pepper to taste Brown ground beef, adding garlic salt, salt and pepper to taste. Bring water to boil in saucepan. Stir in rice; cover and remove from heat. Let stand for 5 minutes. Add butter and meat. Mix all together for tasty, fast meal. Round-Up Bean Casserole 1 lb. ground beef 1 can kidney beans 1 can butter beans 1/2 cup catsup 3/4 cup brown sugar 1 tsp. mustard 2 Tbsp. vinegar Chopped onion and bell pepper, opt. Salt & pepper Brown beef; season with salt and pepper. Combine with remaining ingredients. Put into casserole dish. Bake 1 hour at 350 degrees.
