Mud Hens
Mud Hens Mud Hen Bars Mud Hens I am not sure where the name came from, but this is a family favorite sweet "nosh". By: DaMama_rules Yield: 9 to 12 servings 40 minutes 15 minutes prep Batter: 1/2 cup butter, melted 1 cup sugar 1 1/2 cups flour 3 eggs, saving 2 egg whites for topping 1/2 teaspoon baking powder Topping: 2 egg whites, beaten stiffly 1 cup brown sugar 1 cup pecans, chopped Grease well a 13 x 9 pan. For Batter: Cream together butter and sugar. Add eggs, mixing well. Sift dry ingredients together, add to butter, egg and sugar mixture. Pat out into prepared pan. For Topping:. Add brown sugar to stiffly beaten egg whites,mixing well. Fold in pecans. Spread on top of raw dough and bake for 25 minutes. Let cool for a few mintues and then cut into bars. Good warm or room temperature. From: Diana Rattray 1/4 cup shortening 1/4 cup butter, room temperature 1 cup sugar 1 whole egg 2 eggs, separated 1 1/2 cups flour 1 teaspoon baking powder 1/4 teaspoon salt 1 cup nuts, chopped 1/2 cup semisweet chocolate chips 1 cup miniature marshmallows 1 cup light brown sugar, packed Preheat oven to 350 . Cream shortening, butter, and sugar; beat in whole egg and two egg yolks. In a separate bowl, sift flour, baking powder and salt together; combine flour mixture with creamed mixture, blending thoroughly. Spread batter in buttered 9 x 13 x 2-inch pan. Sprinkle nuts, chocolate chips and marshmallows over batter. Beat the two egg whites stiff; fold in brown sugar; spread over top of batter. Bake for 30 to 40 minutes. Cool then cut chocolate mud hen bars into bars. Makes 32 bars - delicious warm or cold.
