Mud Hens

I am not sure where the name came from, but this is a family favorite
sweet "nosh".

By: DaMama_rules
Yield: 9 to 12 servings
40 minutes 15 minutes prep

Batter:
1/2 cup butter, melted
1 cup sugar
1 1/2 cups flour
3 eggs, saving 2 egg whites for topping
1/2 teaspoon baking powder
Topping:
2 egg whites, beaten stiffly
1 cup brown sugar
1 cup pecans, chopped

Grease well a 13 x 9 pan.
For Batter:
Cream together butter and sugar.
Add eggs, mixing well.
Sift dry ingredients together, add to butter, egg and sugar mixture.
Pat out into prepared pan.

For Topping:.
Add brown sugar to stiffly beaten egg whites,mixing well.
Fold in pecans.
Spread on top of raw dough and bake for 25 minutes.
Let cool for a few mintues and then cut into bars.
Good warm or room temperature.

Mud Hens

1 cup butter
1 cup sugar
3 eggs, 2 of them separated
1 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
1 teaspoon salt
1 cup chopped pecans
1 cup brown sugar

Cream butter and sugar, add three egg yolks and one white and beat
until smooth. Add vanilla. Sift together flour, baking powder and salt
and beat in butter mixture until blended. Pour into 9- by 14-inch pan
and sprinkle with chopped pecans. Beat last two egg whites and
gradually add brown sugar. When stiff, spread over batter. Bake at
325 F for 30 to 35 minutes. Cut into squares while hot.

Mud Hen Bars

Chocolate mud hen bars with chocolate chips and mini marshmallows -
very similar to Mississippi mud bars or cake.

1/4 cup shortening
1/4 cup butter, room temperature
1 cup sugar
1 whole egg
2 eggs, separated
1 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup nuts, chopped
1/2 cup semisweet chocolate chips
1 cup miniature marshmallows
1 cup light brown sugar, packed

Preheat oven to 350 .
Cream shortening, butter, and sugar; beat in whole egg and two egg
yolks. In a separate bowl, sift flour, baking powder and salt together;
combine flour mixture with creamed mixture, blending thoroughly. Spread
batter in buttered 9 x 13 x 2-inch pan. Sprinkle nuts, chocolate chips
and marshmallows over batter.

Beat the two egg whites stiff; fold in brown sugar; spread over top of
batter. Bake for 30 to 40 minutes. Cool then cut chocolate mud hen bars
into bars. Makes 32 bars - delicious warm or cold.
