I am looking for the recipe for Mud Hens. These are cookie bars which have a shortcake base and a pecan topping. They taste something like pecan pie and are absolutely delicious. Mud Hens 1 cup butter 1 cup sugar 3 eggs, 2 of them separated 1 teaspoon vanilla 1 cup flour 1 teaspoon baking powder 1 teaspoon salt 1 cup chopped pecans 1 cup brown sugar Cream butter and sugar, add three egg yolks and one white and beat until smooth. Add vanilla. Sift together flour, baking powder and salt and beat in butter mixture until blended. Pour into 9- by 14-inch pan and sprinkle with chopped pecans. Beat last two egg whites and gradually add brown sugar. When stiff, spread over batter. Bake at 325A F for 30 to 35 minutes.
