Default Peach Melba Jam??

Hi all,

Has anyone ever had Peach Melba Jam? On a recent visit to my doctor, after giving him some strawberry peach jam, he asked if I ever had any peach melba jam.

I must say it sounds rather good. Anyone have a recipe for it?

Peach Melba Jam

Recipe By : Barb Schaller, posted to rec.food.preserving 8-7-05
Serving Size : 1 Preparation Time :0:00
Categories : Canning, Preserves, Etc.

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cups crushed peaches (about 1-1/2 lbs.)
1/4 cup lemon juice
2 cups red raspberries
7 cups sugar
1 box liquid Certo brand pectin -- (2 foil pouches)
Few drops almond extract

To the peeled, pitted, and crushed peaches add 2 tablespoons lemon
juice. Let stand while preparing raspberries. Crush berries and add
remaining 2 tablespoons lemon juice.

Combine peaches and raspberries with sugar in heavy kettle, mix well,
and bring to a full rolling boil, stirring constantly. Boil 1 minute,
remove from heat and add pectin.

Stir and skim for several minutes to prevent fruit floating. Add
extract.

Shoot, it was just a matter of timing. I'd just logged on.
The M.A. Gedney Company makes my Peach Raspberry Jam for commercial
distribution in Minnesota and nearby states. :-0)

(The page is woefully out of date, however; they have dropped the
spreadable fruits :-( and have added four new preserves: my Cherry
Jam, blueberry jam, strawberry rhubarb jam, and a really yummy sweet
orange marmalade.)

How did you find this company and what kind of arrangements did you
make wtih them? Sounds like an interesting story.

I don't think she found them; I think they found her at the MN State
Fair. Peach Melba Jam just happens to be one of her specialties (so you
certainly came to the right place to ask.)
