Just a stupid question
 
I'm trying my hand at making sauerkraut, just a small batch. I was
wondering... could you do the same thing using rutabaga?

I've seen it made with shredded turnips (sauerrubin). I don't know why
it wouldn't work with rutabaga, but I wouldn't make 50 pounds of it to
find out...

funny thing you should mention that.. on the local PBS station, this
week's episode of Chef's Table was on the Artisanal Cheese Factory or
something like that in Manhatten. The chef there made sauerrutabaga to
accompany one of the dishes.
