Pears

Whew! My pears finally ripened up. It's been so long since I've canned
pears that I forgot they have to be picked green and then allowed to ripen.
I've been waiting since last Thursday for them to be ready to deal with. So
yesterday enough of them were ripe to do 10 pints and then this morning I
did the rest and got 12 pints. So a total of 22 pints out of 25 pounds of
Bartlett pears. All were canned in extra-light syrup.

Now it's time to go check my green beans to see if I finally have a canner
load of them.

I've been canning string beans for weeks now. A canner load at a time. We
have a winters supply already put up. Now we're letting them go to seed. My
pears are also canned, in a light syrup and cinnamon. Unfortunately we
couldn't get the ones at the top of the tree. The birds got those. We have
one more load of tomatoes to turn into sauce and we're done for this year.

Wow! My tomatoes are barely turning green. I did not get a canner load
worth of beans, unfortunately. So I washed and snapped what I did get and
stuck them in the fridge. I won't have time to check the garden tomorrow so
Saturday afternoon, I'll get out there and pick and then if I'm lucky, I'll
be running the canner that evening.

On a side note, I noticed pears in the grocery store today. They were
already ripe and ready to eat, though. I didn't buy any.

Pears

I am hoping to go and get some pears this coming Sunday. I've had a
friend ask permission (the tree is where she works) and the answer was
'yes'!!! She also watched them for me--told me this past Thursday
that 'they were big now'. Ready to pick and let ripen--getting all
the boxes out to lay out on any flat surface that will hold them so I
can keep an eye on them.

Do you like pear jelly? I make it the easy way now with the steam
juicer. Let me know and I will post both ways I have made pear sauce and
then used the juice to make pear jelly.

Marilyn,

What variety do you grow? Is it resistant to diseases?

I'd love to put in a pear, but since one of my apples gets fire
blight, I'm reluctant to do it. (Going to have to dig up and replace
the apples with more resistant varities - they both get
cedar-apple-rust and one gets fire blight. The host for the rust is
less than 50 feet away, but it's in my neighbor's yard.)

I always look forward to canning season, but by the end of August, I'm
looking forward to putting it all away and enjoying the past summer's
bounty. Even with the tomato blight this summer, we canned more than a
year's supply. I have a large garden. Next year I'm going to increase the
Okra and give up on greens. They simply wont do well here. My freezer has a
winter supply of mixed sliced peppers.

Pears

I make pear butter and since I don't use all the juice that cooking
the pears down makes, I make pear jelly out of it or I use the juice
to supplement something else if I run short on a batch. I really
should do pear sauce--it would be great to have that for Chanukah to
have on Latkes. Yes George, please post. Thanks!!!

Oh, I don't grown the pears. I belong to a co-op that gets a volume
discount on buying produce from the growers in Central and Eastern
Washington (I live in Western Washington). About every week we get a
different order form telling us what will be available that week. Fill out
the form, pay your money and then when the trucks get back into town, go
pick up the produce.

These were Bartlett pears which are supposed to be the best for canning, I'm
told. The price was very reasonable, 25 pounds for $8.00.

The only fruit trees I have in my yard are an Italian Prune Plum and an
apple tree that is about two years old and has yet to produce. It got a
rough start because we had just gotten a young dog when we planted the tree
and he decided to bite the top of it off. Poor tree had to recover from
that.
