Default Mint Recado

1 medium white onion
40 or so Fresh Mint leaves
1/2 cup Fresh Cilantro
2 Tspns Kosher salt
2 tspns fresh ground Black pepper
8 whole Allspice ground.

finely chop the mint, cilantro and onion, by hand or use a food processor.
Mix in the salt pepper and allspice

For a bit of a kick, finely chop a seeded and stemmed habanero or a Serrano
stirred in just before serving.
Use on goat, lamb, fish
