Easy Grilled Corn

They are fresh enough to go directly on the grill without soaking. |

I've discovered a delicious, easy way to prepare corn.
approximately 10 oz. of fresh corn (cut from the cob) or frozen 2-3 jalapenos, diced (if you don't like heat, be sure to remove all seeds and white membrane) 1 red bell pepper (mostly for color), chopped 8 oz. cream cheese, cut into chunks Place cheese, jalapenos and pepper in a double boiler and begin to heat. If using frozen corn, cook for 2-3 minutes in microwave, drain thoroughly and add to cheese mixture. If using fresh corn, just dump in with the cheese mixture. NOTE: I've tried making this w/o the double boiler, and it either takes forever, or the cheese burns. Heat until cream cheese is melted. Serve hot. "Mr. G. D.
