Export Format Ham And Bean Soup none 8 ounces cubed ham 1/4 cup finely-diced celery 1 cup water 1 cup low-sodium chicken broth 1 can Eden black soy beans 1/4 cup tiny-diced carrot 2 teaspoons minced onion 1/4 teaspoon minced garlic; (optional) 1/8 teaspoon cayenne pepper 1/4 teaspoon cumin 1/4 teaspoon salt In a medium sauce pan, brown the ham. Add 1 cup of water and scrape glaze off bottom of pan. Add low-sodium chicken broth. Drain the water from the can of beans. Add beans to the sauce pan. Add all other ingredients. Stir. Bring to a boil; turn down heat and simmer for at least 1 hour to bring out the flavors -- the longer, the better (3+ hours being best.) This recipe yields 6 servings; 3 carb grams per serving.
