Someone requested a recipe for this not long ago.
I recently got a book called _Don't Panic, Dinner's in the Freezer_ and in it was a recipe for Colorado Enchiladas. Now, I lived in Colorado as kid and enchiladas were darn hard to find as there was one mexican restaurant (Bonito's in Longmont and then eventually this wild place with cliff divers in Denver maybe) at any rate, no enchiladas Colorado or otherwise were readily available. I decided to try them just to see. The sauce is decidedly ORANGE. I haven't baked them yet so I can't say what it tastes like. Perhaps it is just what the original poster was looking for. Real cooks need not read any further as the list of canned goods will just frighten you. Colorado Enchilada Sauce 1 - 15oz can medium green enchilada sauce 1 - 15 oz can mild red enchilada sauce 1/3 C sour cream 3 T cream or milk Stir all ingredients together and use to make enchiladas. marcella |
