Note the choice of veggie...
Mushrooms IME cook at about the same rate as shrimp.
The only other thing I might add to the kebab would be chunk pineapple.
Cooking that is a moot point. ;-)

Any other veggie that needed longer cooking can simply be pre-cooked
prior to adding it to the kebab.
