Default suggestions for really boring fillets

My mom used to crust fish in ground pecans before pan-frying it in
butter. Served with a sour cream - dijon mustard sauce. You could use a
tofu sub for the sour cream, or use soy pplain yogurt, or think of
another way to do a mustard sauce. Pretty good with fish or chicken.

In NM I used to eat baked trout that had been drizzled with honey and
sprinkled with red chile powder and a little cayenne.

I've also had tortilla crusted fish with cilantro, lime, and chili
powder. Top this with guacamole.

I hate to burst your bubble but trout is MEAT. Unless you have some
weird veggie tofu trout that is. I have no suggestions as they include
milk or other lactose products.

One of the best solutions for bland fish I've found other than using
it in soups or stews, is a fresh salsa of tomato, cilantro, garlic,
onion (white or green), jalapenos or serranos, and lime juice. You can
put a layer of salsa on the fish and wrap it in foil or parchment (I
some times throw in a few shrimp too). The salsa will add flavor to
the fish. Serve the remaining fresh salsa at the table. It will liven
up the flavor even more. I do this for snapper and trout and sometimes
for halibut.

And use any left-over salsa for juevos rancheros the following
morning... nothing gets your day goin' like a good protein/jalapeno
