Default Holiday Vacation (and a tasty turkey salad recipe)

For the first time in many years, I am pleased to announce I will be home
for the holidays. The health department has ordered The Feed Bag closed
until some health code violations can be corrected. I'll probably be off
until January. Here is a tasty turkey salad recipe, perfect for the
holidays. This salad is a big hit post-holiday at The Feed Bag. It has a
unique blend of delightful holiday flavors.


INGREDIENTS:

2 cups diced, cooked turkey
1 Granny Smith apple - peeled, cored and diced
1 diced yellow onion
1 cup diced celery
1/2 cup diced radish
1/2 cup chopped cashews
1/4 cup dried apricots, finely chopped
1/2 cup vanilla yogurt
1/4 cup low-fat sour cream
2 tablespoons strawberry preserves
1/4 teaspoon ground nutmeg
1/4 teaspoon ground pumpkin spice
1/4 teaspoon black pepper
1 teaspoon of kosher salt

DIRECTIONS:

In a large bowl, toss together the turkey, apple, onion, radish, celery,
apricot and cashew pieces.

Whisk together the yogurt, sour cream, strawberry preserves, nutmeg, pumpkin
spice, salt and pepper. Spoon over the salad mixture and fold until
well-blended. Serve scooped over a bed of Romaine lettuce.
