Another recipe to cook beef shanks is this:
OSSIBUCHI ALLA PIZZAIOLA Category: meat Nb persons: 6 6 ossibuchi (beef shanks) 1 pound canned tomatoes 1 carrot 1 stalk of celery 1 onion 1 clove garlic 1 1/2 ounce butter 1 cup white wine - dry 3 tbs olive oil - EVOO 3 tsp oregano few flour salt - as taste pepper - as taste Mince onion, celery, garlic and carrot ; put this mixture in a frying pan with oil and butter and cook for a while at high fire. Put the lightly floured ossibuchi in the same frying pan and let them brown both sides. Then season them with salt and pepper. Soak with wine and wait it completely evaporate , then add tomatoes (mushed with a fork), oregano and other few salt. Cover the pan and cook for about 30 minutes at low fire. You can serve with potatoes purée or cauliflower or cooked vegetables.
