You're talking about Dinuguan - a Pork Stew with Pigs Blood. My wife
and her mom (yes their from the Philippines) make it. Our variation
includes beef and beef tripe, redolent with onions and garlic. If it
tastes like rusty jello it wasn't made properly. For the uninitiated
there's no cocoa in it - not like a mole sauce. The color is derived
from the additions of pigs blood into the recipe. You know blood, the
same stuff in au jus that's ladeled over prime rib.

The worst thing I ever ate - another Filipino delicacy - balut: a
fertilised duck egg with a partially developed duckling inside. I draw
the line at that.

Not for the first time, we took visiting Europeans to a Denver landmark
restaurant tonight, The Buckhorn Exchange. We had rattlesnake, Rocky
Mt. Oysters, and buffalo rib roast.

Other menu items included elk, bear, ostrich, yak, and venison.

The Buckhorn boasts Denver's liquor license #1 and approximately 500
dead, taxidermied animals of all kinds mounted on the walls. As we told
our guests, it's a wild west cultural experience.

There are a couple of local restaurants with similar menus (I prefer
"The Fort".) and they seem as popular with locals as tourists. The Fort
also serves jalapeno poppers stuffed with peanut butter (lots tastier
than it sounds), boudin (game sausage) and alligator.

Not terribly unusual, but not Chili's or TGIFriday's fare, either.

Raw caribou, sliced right off the leg. Kinda like caribou sushi.

Next was raw seal and raw kelp for dinner. Both of there were while
visiting the High Arctic. Baffin Island. Raw seal was like raw
chicken, which grosses me out.

LOL! I feel you, kid. I'd eat monkey meat, fine -- but grilled, with
a side of steamed brown rice.

The fish were dead, but there was something spooky about them. All
those little black eyes, like pepper specks, staring at me. <shudder>

I've eaten the crickets in thailand, saw the dogs in vietnam, but the best
was raw horse ("basashi") in tokyo. i passed on the chicken sashimi tho.
Nato, by the way, (fermented soybeans) is great. makes you fart tho.

Worst tasting... nutria stew. Nutria are very big river rats found
mostly in the south.
